Most NOW memberships are monthly and can be cancelled at any time. Some discounted offers, especially on Sky Sports, have come with a minimum term of several months, which you can't cancel early. Read whether an offer is rolling or fixed before you sign up.
If you mainly want Sky Sports for particular matches, time your membership so the discounted months cover them. A Black Friday sports offer that ends in February may be poor value if the games you care about are in the spring.
When the discounted months end, the membership renews at the full price unless you cancel. Existing customers who cancel are sometimes offered a discount to stay, so it can be worth going through the cancellation steps before paying full price.
